The KITCHEN is pleased to host longtime friends, Theresa Paopao and Sasha Duerr, who will share their overlapping interest and expertise on the subject of terroir - and how it influences and affects the nuances of wine and plant-made color. In this hour long class, you'll experience an interactive wine tasting and plant color demo, while you learn from wine director at Oleana, Theresa Paopao and author of Natural Color, Sasha Duerr. Explore just how much alchemy of time and place makes for a uniquely inspired palette - whether it's the terroir of taste or color.

About Sasha Duerr
Sasha Duerr is an artist and designer who works with seasonal place-based color palettes. Sasha is a professor in Textiles at the California College of the Arts and founder of The Permacouture Institute, which explores regenerative design for fashion and textiles. Her work with natural colorpalettes and slow fashion has been featured in the New York Times, Whole Living Magazine, and the Huffington Post. She also consults in plants based colors, working with Levi’s, Anthropologie, and Whole Food’s Market among others. Sasha is the author of The Handbook of Natural Plant Dyes (Timber Press. January 2011) Natural Color (Watson-Guptill/Ten Speed Press. 2016) and a new book forthcoming from Princeton Architectural Press Spring of 2020.
Theresa Paopao, Wine Director, Oleana
Advanced Sommelier Theresa Paopao hails from the small town of Hilo on the Big Island of Hawaii. She left paradise to pursue a graduate degree at the Yale School of Drama, then moved to Boston where she fell in love with the restaurant business and the world of wine. Paopao originally joined the team at Oleana as a manager in 2004, eventually earning the position of wine director. After six years at Oleana, Paopao moved to New York City to join David Chang’s Momofuku as the head wine director; she later opened Momofuku Toronto, serving as beverage director. Paopao returned to Boston in 2013, opening the now-shuttered Ribelle with fellow Momofoku alumni, chef Tim Maslow. In 2016, Paopao joined the team at Asta in Boston, and in the summer of 2018, she reclaimed her title of Wine Director at Oleana. Since 2011, Paopao has been honored to serve as a judge for Decanter Magazine’s annual World Wine Awards held in London.
